While direct optimal pH data is not available, related sucrose fatty acid monoesters maintain excellent stability within a pH range of 5.0 to 7.0 at ambient temperatures. Formulators should be cautious at lower pH levels (e.g., pH 3.0), as this has been observed to cause significant emulsion instability for some sucrose esters. For complete dissolution in water, particularly for its foaming capabilities, heating to 60-70°C may be necessary. It is also suitable for water-free cosmetic applications and can stabilize oleofoams, especially those with lower HLB values (3-9).
