Stability

This ingredient is water-soluble, readily dissolving in both hot and cold water to form viscous solutions. Stability is compromised below pH 4.0, where polymer breakage and viscosity reduction can occur, particularly with concentrated acid addition. While generally stable across a wide pH range above 4.0, its viscosity may reversibly decrease at elevated temperatures.
