Conversely, casein micelles begin to destabilize at highly alkaline pH values, such as approximately 11.5. Formulations developed near the isoelectric point (e.g., pH 4.6) may experience emulsion stratification and flocculation due to diminished electrostatic repulsion. The quaternized form of this protein peptide demonstrates stability when fully dissolved.

The Cosmetic Ingredient Review (CIR) Expert Panel affirmed the safety of hydrolyzed casein and related bovine milk proteins for use in cosmetics at current concentrations and practices. Specifically, Hydrolyzed Casein (molecular weight 600 Da) demonstrated no irritation or sensitization in human clinical tests when applied at a 30% solution. Although milk proteins are recognized food allergens, the CIR Panel concluded that the induction of Type I sensitivity from cosmetic application is unlikely. The maximum reported concentration for casein-derived ingredients in leave-on products is 2%. While general casein safety data sheets mention a possibility of mechanical irritation with prolonged contact or irritation/rash on moist skin, technical grade casein hydrolysate is not classified as corrosive or irritant to skin.
