Lower temperatures favor the formation of glucono-delta-lactone. In aqueous solutions, Gluconolactone rapidly hydrolyzes into Gluconic Acid, resulting in a notable pH decrease; for instance, a 6% aqueous solution can drop from a pH of 3.6 to 2.5 within two hours.
