Its stability is highly dependent on pH, with rapid degradation occurring above a pH of 5 to 7. Exposure to light, heat, dissolved oxygen, and metal ions also significantly diminishes its purity and efficacy, with substantial degradation observed even at room temperature and up to 85% loss after 1 hour of UV exposure. Optimal stability is achieved within a pH range of 3.5-4.5 and by storing the ingredient at 2-8°C. The incorporation of stabilizers and/or encapsulation techniques is strongly recommended to preserve its integrity and performance.
