It demonstrates stability under typical conditions, maintaining thermodynamic integrity up to 350°C, with a phase transition at 230°C. While generally stable, it undergoes dehydration and decomposes above its melting points (around 150°C for the dihydrate form, 195°C for the anhydrous form). A 5% aqueous solution of disodium tartrate registers a pH between 7.0 and 9.0 at 20-25°C.
