Pectin is readily soluble in water, regardless of temperature. Its gelling properties are influenced by its type and formulation conditions: high-methoxy pectins typically gel at pH 2.8-3.6 in the presence of high soluble solids (e.g., sugar), whereas low-methoxy pectins require calcium for gelling and can function across a wider pH range of 2.6-7.0 with lower soluble solids. While the general pH range for pectin in formulations is 4-7.5, acidified pectins achieve optimal characteristics at pH 3.4-3.6. Rapid cooling of formulations containing acidified pectins from temperatures exceeding 70°C is crucial to prevent viscosity loss. High concentrations may impart a slightly tacky sensation.
