The hydrophobic dodecyl group enhances its preventive antioxidative action. Furthermore, Dodecyl Gallate acts as an antimicrobial agent by disrupting microbial biomembranes and impeding the membrane respiratory chain, effectively targeting fungi, yeast, and various bacteria, including B. subtilis and MRSA.
